Chocolate Chip Chia Cookies

Ingredients

  • 1 Cup Almond Flour
  • 1/2 Cup Oat Flour If you don't have oat flour, simply blend whole oats in a blender for 15 seconds until its a fine powder.
  • 1/2 Cup Rolled Oats
  • 1/4 Cup Chia Seeds
  • 1/2 tsp Baking Soda
  • 1/4 tsp Sea Salt
  • 1/2 tsp Cinnamon
  • 1/4 Cup Melted Coconut Oil
  • 1/3 Cup Maple Syrup Or, 1/4 Cup Coconut Sugar
  • 1 Egg
  • 1/3 Cup Dark Chocolate Chips

Instructions

  • Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the dry ingredients: In a medium bowl, whisk together almond flour, oat flour, rolled oats, chia seeds, baking soda, sea salt, and cinnamon.
  • Prepare the wet ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or coconut sugar), vanilla extract, and egg
  • Combine: Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms. Fold in the dark chocolate chips.
  • Place on Cookie Sheet: Scoop about 1 1/2 tablespoons of dough and roll into balls or use a small cookie scoop.
  • Bake: Bake for 10-12 minutes, or until the edges are golden brown. The cookies will be soft when they come out of the oven but will firm up as they cool.
  • Cool and enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
